Heat olive oil in a small saucepan over medium heat, add the onion and garlic, and cook gently for about 5 minutes until softened.
Add the remaining tomato jam ingredients to the saucepan, stir, and simmer uncovered gently for about 40 minutes. All the liquid should have evaporated, and you will be left with a sticky jam.
Place in jars and refrigerate.
