1 ½ lb ground beef, 2 onions… brown in large skillet
Add: 1 can Las Palmas enchilada sauce, 1 #2 can tomatoe juice, 2 tsp chili powder, ½ tps vinegar, 2 Tbsp sugar…. Simmer until a little thick (remove grease from top)
Dip corn tortillas in sauce to cover both sides and place on greased baking sheet
Add a spoonful of meat & sauce, grated med. Cheddar cheese; fold in half (hold with toothpick)
Fill the whole baking sheet
Cover all enchiladas with more grated cheese & chopped green onions
Bake 350 degrees until cheese melts
