Simply combine the cinnamon sticks, apple cider, apple juice, sugar and vinegar in a large stock pot. Bring it all to a slow rolling boil stirring constantly and turn off burner. Let the mixture sit for about 15 minutes on burner to start cooling. After 30 minutes remove the cinnamon sticks (or longer to taste)
Allow the apple cider mixture to totally cool down to room temperature.
Once the mixture is at room temperature, stir in the Everclear and the two cups of rum.
Pour into canning jars or gallon jugs, secure lids and let sit for a few weeks for the flavors to mix.
As the apple pie shine ages, the cinnamon and sugars blend out the alcohol taste to an almost undetectable level.
