Mix the burger, Parm Pesto oil and pepper together. Shape into patties and set aside in the fridge.
Sauté the mushrooms, garlic and shallots in the butter and set them aside.
Coat the onions with the Whiskey Chili sauce. Wrap each ring with 3 slices of bacon and secure with toothpicks.
Turn on grill to medium heat. Grill onion rings until the bacon is crisp. Set aside to stay warm. Grill burgers until almost done. Leaving the burgers on the grill, turn heat down to low and top each burger with an onion ring. Fill the inside of the onion ring with mushrooms and top with cheese. Cook until the burgers are done and the cheese is melted.
Place burgers on buns and top with your choice of condiments.
