Add sugar to water and bring to a rolling boil stirring constantly until sugar is totally dissolved. Remove from heat and add coffee stirring until totally dissolved. Let mixture stand until cool. Meanwhile, split vanilla beans lengthwise and cut in half, add to a half gallon sealable container. Add Everclear to container and shake, then mix in the cooled water/sugar/coffee mixture. Let stand in a cool dry place for 45 days, shaking mixture every day/few days while standing. After 45 days, ENJOY!!!
