Tom's Chocolate Stuffed Strawberries

  1. 1. Wash strawberries and dry well.
  2. 2. Cut the tops off the strawberries and hollow them out using a small spoon or a
  3. strawberry huller.
  4. 3. Place the 3 tablespoons of chocolate chips in a small dish and melt in microwave at 50% power for about 20 seconds.. continue
  5. in 15 second increments until the chocolate is melted
  6. 4. Slice a thin piece of the bottom of each strawberry so it can stand up and pat it dry with a paper towel. Dip the bottom
  7. of each strawberry into chocolate and then into the cookie crumbs. Place on a parchment lined pan.
  8. Chocolate Cheesecake Filling
  9. 1. Place the ¾ cup chocolate chips in a small dish and melt on 50% power for about 35 seconds.. continue in 20
  10. second increments until the chocolate is melted. Cool.
  11. 2. With mixer on medium, combine cream cheese, vinegar, butter, vanilla, cocoa powder and sugar until fluffy. Add in cooled
  12. chocolate and mix on low until incorporated. Add in whipped topping and stir/mix just until combined.
  13. 3. Place chocolate cheesecake filling in a ziploc bag with corner cut. Pipe into
  14. the strawberries (there will be lots of filling, don't be afraid to overfill!).
  15. 4. Top with an additional piece of strawberry and serve immediately or refrigerate up to 4
  16. hours.
