Tom's Meatballs with Blackberry Hoisin Sauce

Ingredients

  1. To prepare meatballs, preheat oven to 425°F.
  2. Line a baking sheet with foil for easier clean-up.
  3. Mix meat, crumbs, soy sauce, ketchup, ginger and green onions until well combined.
  4. Press a thin layer of meat (about 1/8-inch) around each blackberry, sealing completely. Place on prepared baking sheet.
  5. Bake 10-12 minutes until meat is cooked, turning balls over half-way through for more even browning.
  6. Keep warm until serving.
  7. To prepare sauce, combine 1 package blackberries, hoisin sauce, vinegar and ketchup in a small saucepan.
  8. Cook over medium heat, pressing or mashing blackberries into sauce. Simmer until heated through and slightly thickened.
  9. Serve meatballs drizzeled with sauce over your favorite asian pasta.
